Insights from 30 Years in the Industry

Celebrating three decades of innovation and passion in the craft beer industry, Chris White shares his insights and love for the craft beer community.

A Journey Through Time: 30 Years of Craft Beer

Over the past 30 years, the craft beer industry has undergone remarkable changes. From humble beginnings with a handful of passionate brewers, the industry has grown into a global phenomenon. Early on, craft beer was about reclaiming the artistry of brewing, focusing on quality ingredients and traditional methods. Over time, this dedication to craft and quality attracted a loyal following, leading to rapid expansion and innovation within the industry.

The evolution has also seen the introduction of new styles and techniques, driven by both consumer demand and the creativity of brewers. From the revival of ancient brewing practices to the creation of entirely new beer styles, the journey of craft beer has been one of continuous exploration and discovery.

The beer profession has been so rewarding to be a part of these many years. I've met incredible people, learned so much from them, and hopefully contributed back to the industry. I've seen many different styles crafted, some come and go. Same with breweries, some come and go, but many more have proliferated.  Within our own company, I have seen us grow from small beginnings to larger facilities in San Diego, then expansions to Asheville, NC, and Copenhagen, Denmark.  Each site has White Labs value at the core, but different local cultures and people. I've watched employees who stay for 20+ years, building their relationship with the industry alongside their lives and their families. One of the things people tell me all the time is: "Chris, White Labs has great people,"  and that brings me a lot of pride. With the ups and downs in the craft beer community, one thing has been constant: I love going to work every day.

Thank you to my family, to my White Labs family, and our family of customers for the best 30 years.

Fermentation Controls: Yeast Health

Yeast health is critically important for building a successful brewing operation. It not only supports consistent, high-quality beer production, but also drives financial performance through shorter tank residency times, fewer off-target batches, and increased generational re-pitching of yeast cultures. We will explore what yeast health actually means, how to monitor it, and the key fermentation…

Fermentation Controls: Temperature

Temperature is one of the three key cold-side variables, along with pitch rate and dissolved oxygen, that brewers can control to influence fermentation performance and flavor. We’ll break down how temperature impacts yeast activity from knockout through the end of fermentation, and how dialing it in leads to consistent, predictable results. Knockout Take your yeast…

Why Pitch Rate Matters (And How to Nail It Every Time)

Pitch rate is one of the most underrated levers in brewing, and yet it impacts everything from tank turns to ester profile to repitching health. When pitch rate fluctuates, so do fermentation speed, flavor, and your cellar schedule. Brewers can control multiple factors on the cold side. There are 3 key variables brewers can dial…
